We welcomed farmers, advocates & naturalists for a farm tour & cooking class. From learning about rice under the pines and walking through rice fields, to gathering in the kitchen to make tortelli & risotto with our own Olga Carnaroli, we had a fabulous time. Good food, and good company!

We’ve been cooking up something special in our own kitchen—asparagus arancini made with our organic Ribe rice and just a hint of saffron. Creamy, crispy, and full of spring flavor, they’re everything we love about this season in one golden bite.  We’ll be sharing the recipe soon—straight from our table to yours. Stay tuned!

We’re overjoyed to welcome eight new baby calves to our herd this spring! Watching them take their first wobbly steps in the pastures is always a reminder of the magic of this land and the new life each season brings. We’re thrilled to welcome three new team members to Tenuta San Carlo this year. Martina, who works with Ariane to manage the farm, joined us in October and has been working tirelessly to keep our crops rotating and ensure that the soil and our animals get all the care they need. Elizabeth is overseeing hospitality in our agriturismo, and is dedicated to making our guest experiences better than ever. And Gemma, who has spent the last two years cooking for our program groups and leading cooking activities, will now be managing our agriturismo kitchen. She’ll also be developing new recipes and products as we embark on exciting new projects at the farm.
