As the season shifts, we’re making lapanzapiena’s risotto with fiolaro broccoli — a winter green from Veneto — brightened with bottarga, bee pollen, and lemon zest.

Harvesting our most delicate Carnaroli 🌾 Fabio’s on the combine covering up to 8 hectares a day. This field’s been resting for seasons and the yield looks good. The cattle egrets are loving it too — bug buffet day 🪱🪰🕷️🪲

A few weeks ago Ariane traveled to Amsterdam for the Regenerative Agriculture Summit 2025. It was an inspiring few days of conversation and exchange with farmers, researchers, and innovators shaping the global regenerative movement. A highlight was joining a group of Climate Farmers climatefarmers on a visit to Gagel Farm gagel_farm, a pioneering project just outside the city, where ideas about soil, community, and resilience came to life in the fields.
