To conclude our trip in Japan, Team Meat Japan had the honor of being hosted by the Japan Livestock Products Export Promotion Council for an all-day Wagyu seminar. From start to finish, it was an incredible journey into the world of Japanese Wagyu, filled with insights and hands-on experiences. 🥩🔪 We began with an in-depth overview of Wagyu, learning more about its unique qualities and heritage. Then, we witnessed two butchery sessions, where skilled Wagyu Butcher demonstrated the precision and expertise that go into portioning perceived difficult to cut parts such as Shoulder Clod and Bottom Round. The day ended with a cooking demonstration that maximized all the meat, fat and trimmings from each cut and showcasing traditional and contemporary Japanese methods of preparing Wagyu—a true celebration of flavor and craftsmanship. ❤️ A heartfelt thank you to the Japan Livestock Products Export Promotion Council for this unforgettable experience and for sharing the knowledge and traditions that make Wagyu so exceptional with our team!

From learning about the specialized feed—including miso, sweet potatoes, and fermented soybeans—to interacting with the cattle, it was inspiring to see the care and precision that go into every detail of the process. 🥇 It was also a proud moment for us to present the Juku team with our Gold Medal from the World Steak Challenge 2024—a testament to the exceptional quality they bring to every cattle in their care.
