So a little rough start, first visit host seemed to not be all there, no bourbon and burger was severely overcooked too the point I had to ask for it to be sent back. Server took care of it, second attempt still not medium but medium well was still tasty, the leaner grass fed beef can be tricky I know from experience, the manager made it right either way. Regardless of the rough start the tacos were delicious and the riced cauliflower was there best I have had anywhere, ever. Drinks were excellent as well, with excellent value also so overall experience was positive. Now on to the second visit the next day as we wanted to try more and see if the QC at the pass was just a fluke. First impression was concerning host appeared to be the same person and still seems to not be very organized, with a strange exchange that leaves me puzzled on their priorities and focus. However we get a table in about 5-10 minutes. We got seated in the back area to the right of the restaurant bar with another excellent server this time we got the chicken parm and the GF chicken sausage pizza, though not perfect both are excellent and a great value for the quality. My only real complaint on the chicken parm was the consistency of the veg size. It allowed for some rather burnt pieces instead of just charred, that were left on the plate. The pizza was excellent but not elevated so you have a good crust, normal teeth sticking rice/cauli attribute that hasn't been solved by anyone yet to my knowledge, tasty sausage, fantastic sauce, delicious cheese and magnificent balance, to get to the next level just needed a bit of punchy flavor to make it unique. Drinks were excellent as was anticipated given the first visit, bourbon on the menu this time and just as amazing as I thought it would be as was the dragon fruit margarita. However the star of the show here was the monarch, unlike any recipe I have seen before and an experience unto itself. Rosemary instead of mint, the addition of cucumber and if I recall correctly an orange peel which elevated the whole thing between them. A close second being the GF chocolate cake, intense chocolate flavor with a surprisingly nice texture and from what I recall a nice little salty kick. We stayed in Vegas first week of August 2021.
